Verdict: For everyday Indian cooking, triply stainless steel offers the best balance of safety, durability and performance. Hard anodised is a budget compromise; non-stick costs more in the long run because you replace it every 18 months; cast iron is wonderful but reactive with tomato and tamarind curries. ## How to Care for Triply Cookware

Treat your MaxFresh triply right and it will outlive your stove. Here is everything you need to know:  
  
**Daily use**

-   Always preheat the empty pan on low-medium for 30-60 seconds before adding oil. This activates the natural Leidenfrost effect and creates a temporary non-stick surface
-   Use room-temperature ingredients where possible - cold meat or cold dough hitting a hot pan will stick.
-   Add salt only AFTER water boils. Cold salty water can cause tiny pits in stainless steel over time.
-   For eggs and dosas: heat pan, add 1 tsp oil, swirl, then drop the heat to medium-low before adding batter.

**Cleaning**

-   Let the pan cool fully before washing. Never plunge a hot triply pan into cold water - thermal shock can warp the aluminium core.
-   Daily clean: warm water + mild dish soap + soft sponge. That is it.
-   For stuck-on food: simmer 1 cup water + 1 tablespoon baking soda in the pan for 5 minutes, then wipe.
-   For rainbow heat tints: rub with a paste of white vinegar and a pinch of bartan cleaner, rinse.
-   For stubborn black burn marks: Bar Keepers Friend cleanser, or a paste of cream of tartar + lemon juice. Removes marks in under 60 seconds

**What NOT to do**

-   Do NOT use steel wool or harsh abrasives - they leave micro-scratches. Use a non-scratch nylon scrubber instead.
-   Do NOT add cold ingredients to a screaming-hot empty pan - this is the #1 cause of warped bases.
-   Do NOT store food inside the cookware overnight. Acidic ingredients (tomato, tamarind, lemon) can pit the surface over many hours.
-   Do NOT use bleach-based cleaners - they corrode stainless steel and void the warranty.
-   Do NOT use the pan empty on high flame for more than 60 seconds - even triply has limits.

**Storing**

-   Stack pans with a soft cloth or paper towel between each piece to prevent surface scratches.
-   Hang large items (kadai, tawa) on a wall rack to save cabinet space and prevent dents.
-   Store lids separately upside-down to avoid trapping moisture.
